Thanks to Nola Bloor for this tasty salad recipe.
- 1 little gem lettuce
- 1 tin tuna in brine 160g
- 250 g baby potatoes
- 100g French beans
- 1 hard boiled egg
- 1 red onion (you only use about a quarter)
- 2 tomatoes
- 2 tbl sp olive oil
- 1 tbl sp vinegar
Mix olive oil and vinegar.
Boil potatoes for 15 mins.
Boil beans 5 mins (I use the same pan adding the beans for the last 5 mins).
Drain potatoes and beans and toss in the dressing.
Wash lettuce, cut tomatoes into chunks, quarter egg, thinly slice onion into rings, drain the tuna.
Place all onto serving dish.
